- Our food is consistently very elegant and it’s the classic wines that accompany them best, he adds. We try to cover all of Europe but of course, the large districts, such as Bordeaux, Burgundy and Piedmont, we have greater breadth.
When Peter chooses wines from new world, the ambition is to pick gold grains from both large houses and the really small, traditional producers. He wants to have wines from all over the world, a good range simply and is careful not to lock itself, but be open and receptive to new impressions.
- We also work with more unexpected wines, it can be one from a lesser known area of Europe or a rare grape. As an example we have in vinpaketet a wine from Alto Adige Kerner in the side of a dry Tokaj. This is followed by Åkerö Apple Icewine from Blaxta outside Flen. Such things are often appreciated, even by the more vinkunnige guest.
